The enzyme is present in bacteria that live in the mouth and digestive tract, which use it to convert the sugars from food into sticky chains that adhere to the teeth. This causes dental plaque buildup. The scientists say that it may be possible to add enzyme inhibitors to toothpaste, or possibly even to sweets.
